I have looked in the forum and how do I get to set the Release of Jog Wheel When Scratching?
I can move the sound back and forth like a scratch but as soon as I let go the track does not start playing straight away. It stops then starts playing. I know it's probably not as good as real vinyl or timecode setups but there must be a way to configure the release of the jog wheel?>

The console is not really the best scratch device...
But regarding the release time, try release the scratch on the forward movement...
Even turntable (real vinyl) users have to do that... Give it a "push" :)
Scratching is not easy at all... so practice a bit.
Actually, when adapting your own techniques on the Hercules, the scratch can be quite amazing.
Just listen to Dj Gauge on VDJ radio.... its amasing how well he scratches on the console:)
