Everytime I start VDJ, all fader are up at 100% and PFL of Ch 1 on, even if they have totally other positions at exit of VDJ.
It doesn´t matter with/without controller and it seems to be an issue in the current version.
At versions beginning of 2020 the issue was not there.
I found at least one similar post to that topic, but no solution.
I did also press the button "reset" for all, but this not helps.
Any idea/solution?

Yes, this is the correct behavior and is/was always like that.
Main reason these reset (among others) is to make sure you get Audio output and usually the first Deck you load in your Headphones.
Some hardware/controllers report the positions of the faders on connection, so right after VDJ starts, the positions in the GUI will match the ones the hardware reports, but that's not the case for all of them, so depends which controller you use.
If you still want to get a different status on startup, you can add some actions in the ONINIT key of your keyboard mapping..
e.g. ONINIT key mapped as .. deck 1 volume 0% & deck 2 volume 0% and deck 1 pfl off
