I'm interested as I'm looking for a solid VDJ controller and the DDJ-800 looks like, on paper at least, it ticks all the boxes.

Not DJ 2legit but:
4 deck mixing is a hack on a DDJ-800 even when it's possible to change the channel selector without cutting of audio on the currently selected channel
It is first and foremost a 2 channel controller - and with only 2 channels/upfaders it will never be a simple task to do 4 decks mixing on it
So if you are looking for a 4 channel controller, you should probably look elsewhere

Are you also able to tell me how well the controller handles hands on real time stems separation?

Any controller can do that, and any controller with a pads section can do it well
It all depends on if the laptop can handle it
