I'm totally new to Virtual DJ Pro. How far do I have to adjust the pitch to go up or down a half octave or full octave?

The pitch does not effect its musical value per say. It speeds up, or slows down the speed of a song. Granted, if you adjust the speed enough it will change its key value.

That totally depends on your current BPM
Generally 3-5% pitch shift will alter they key.
If you dont want to alter the key of song, you can use keylock (anywhere on the pitch scale), and only adjust tempo
How much for an octave is hard to say, but there is a keychange plugin floating around, think its still available for download as a karaoke plugin, that is a bit easier to use, as it has octave up and down buttons
