I am trying to mix two audio tracks, while having another monitor set up to act as a video screen, for visuals etc.

Everything is set up in the video tab etc, the problem is when I select the plugin at the bottom from the drop down list, most of them simply do not work! Sonique for example, the one I really want, doesn't display anything on screen. The Titler one works, it outputs the name of the song ok, so I know its set up properly.

Perhaps you need to download some plugins separately??

Sonique is not supplied with any presets; you will need to download some. A tested approved pack is available on this site (some available Sonique presets can be a bit nasty to non-Sonique hosts) for registered users - for trial users I'm afraid you'll have to search the interweb :)
