Not much to say, but it's quite horrible, Every time I make a transition the other player stops, I have a small gap, very shot, but annoying... I have the decks synced.

Sounds like you have faderStart and faderStartStop on. Switch those off and try again.

It may also be a hardware issue with the XDJ-XZ. I have just tested it more deeply and it is happening when I move a fader over a specific position. But the strange thing is that the audio drops out on the other deck. Not on the deck the fader belongs to.

Okay, I just checked. FaderStart and FaderStop are both deactivated. That can not be the reason.

There may also be such fader start/fader stop functionalities built in to and controllable from the hardware.
Most Pioneer controllers have a Settings Utility, installed separately, where you can access those controls from, or if it is directly built into the firmware, the control may be accessible from the device itself.

I have looked it up and there is no hardware fader start/stop functionality on the XDJ-XZ. It totally depends on the settings in the software. But thank you anyway for trying to help...

Did you do any custom mapping?
Without all of the specifics of your software setup, there isn't much that can be suggested (the behavior you described isn't the default software behavior on crossfade/volume fader use).
