So I've tried to add new music to virtual DJ via iTunes but for some reason it just keeps showing all my old music

If you're talking about apple music subscription service, you can't dj with those tracks because you don't own them, they're DRM protected.

Legally no, apple music is a consumer service, apple decided djing is a professional activity, some cases it is, some it isn't [hard to police that]
Atomix aren't going to start a fight with apple legal.
The thing is, it always turns into a line level signal somewhere, the ethics of that are a grey area.

If you want to use rented music with VDJ, then Deezer is the way to go. That's the service built in to VDJ.

There are other DJ programs that use e.g. Spotify, Tidal etc.

None of them use Apple Music.

No, Deezer isn't the only option in VDJ, but it's the closest thing to Apple Music.

The other choices are covered in the manual.
