I would appreciate the ability to highlight a bunch of tracks and go into tag editing and hit an X button next to each field in order to clear the tags from all the currently selected tracks.

Select multiple files and then Open Tag Editor (Batch Edit) is already possible, but i gues you already know that.
For batch deleting tags, have you tried to mark with mouse whatever is inside the field and delete (or even type a space) and then press Write Tags. ?
Or is there some specific fields that the above doesnt work as expected ?

Hmm. Will have to try that sometime. Right now I fix everything outside VDJ using MP3Tag. It's much more powerful. Occasionally I spot some mistakes and fix them in VDJ but for mass tag type stuff I find VDJ somewhat limited.
