What is the best audio recording software? And please don't say Audacity because it sucks; the interface is totally non user friendly and I used it to record a live set the other night and it crashed 3.5 hours in. And I can't use VirtualVinyl's built in recording feature because it causes a crash every other time. I don't care if I have to pay for it, I just want to be able to simply record a live set from the output of my mixer into the microphone jack of my MacBook. All I ask is that the recording software is stable and has a level meter so I can see the input volume, that's about it, I don't need much in the way of bells and whistles.

Agreed with the crashing at least on macs... built in recorders are not good with the mac.

Since you said you have a MacBook, I assume you're using Virtual DJ on Mac OS X.
I record all my set with Sound Studio. It's a great piece of software; light weight, very stable (never had a crash, ever), includes all the essential features, no useless feature or bloat. It's also great for after editing/mastering.

Best recording software depends on what you wanna do, and how much you're willing to pay...
In the studio I use Adobe Audition, and it should cover most needs. Also I have used it to write 8 tracks (multi-track recording) up to 6 hours of live performance without any issues. However, Audition is NOT on the cheap side of the software...
For my needs Cubase would be a good alternative, but I liked Audition better ;)
